Banana Oatmeal Muffins

About the Recipe


  • 1/2 cup olive oil

  • 1/4 cup honey or maple syrup

  • 2 ripe, mashed bananas

  • 2 eggs

  • 1/2 cup Greek yoghurt

  • 1 teaspoon vanilla

  • 1 teaspoon cinnamon

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1.5 cups wholemeal flour

  • 1 cup rolled oats

  • 1.5 cup fresh or frozen blueberries


Step 1

Mix olive oil and honey (or maple syrup) on full speed in a large bowl until creamy.

Step 2

Add Greek yoghurt and eggs and mix until well combined.

Step 3

Add mashed bananas, vanilla, cinnamon, baking powder, baking soda and combine.

Step 4

Stir in the flour and oats, and add the blueberries and gently combine.

Step 5

Line a 12-cup muffin tray and evenly distribute the muffin mixture.

Step 6

Bake at 190 degrees celcius for 20-25 minutes or until a toothpick is insterted in the centre and comes out clean.
